Almalus Place

Come vi avevo promesso, oggi sono tornata con la ricetta della Torta Mimosa che avevo preparato per il brunch di Pretty Hostess Little Movies. Una delle mie torte preferite fin da quando sono bimba, la mia mamma ce la preparava sempre in primavera (e non solo!).

As promised, today I am back with my Mimosa Cake recipe, that I prepared for the Pretty Hostess Little Movies series. One of my favorite cakes since I was a child, as my mom frequently baked it for us in Spring (and not only!).

Ingredienti per il Pan di Spagna / Ingredients for the Sponge Cake:
3 uova / eggs
90 gr  farina / flour
75 gr zucchero / sugar
un pizzico di sale / a pinch of salt

La ricetta del Pan di Spagna è quella che ha sempre usato mia mamma, non ne ricordo o conosco la provenienza… Le uova devono essere a temperatura ambiente. Battete le uova e lo zucchero nella planetaria per almeno 20 minuti. Dopodiché setacciate la farina in due o tre riprese. Imburrate una tortiera di circa 2o cm di diametro. Infornate, in forno preriscaldato a 160°C per circa mezz’ora.

This recipe is exctly the one my mom used, I don’t know wher it came form… Eggs must be at room temperature. Beat the eggs and sugar in the bowl of an electric mixer for at least 20 minutes. After that, sift the flour in a couple retakes. Grease a pan of about 20 cm. Bake in a preheated oven at 160°C for about 30 minutes.

Ingredienti per la Crema (ricetta della crema pasticciera di L. Montersino) / Ingredients for the Cream:
200 gr latte / milk
50 gr panna / whipping cream
75 gr tuorlo / yolks
75 di zucchero / sugar
25 gr di amido di mais / corn starch
una confezione di ananas sciroppate in lattina / canned ananas
500 gr panna / whipping cream

Mettete il latte e la panna a bollire. Nel frattempo, battete le uova e lo zucchero, fino ad ottenere un composto spumoso. Fermate la planetaria e aggiungete l’amido. Ricominciate a montare. Quando la panna e il latte arrivano a bollore, versate l’uovo montato nela casseruola. Non girate subito la crema. Ma solo quando sui lati comincia a bollire e si vedono delle bollicine anche al centro. A questo punto usate una frusta per sbattere la crema, fino a formare una crema densa. Mettete in una terrina e coprite con la pellicola alimentare. E fate raffreddare in acqua e ghiaccio.

Boil milk and whipping cream. Meanwhile beat the eggs and the sugar until smooth. Stop the mixer and beat in the starch. When milk and cream start boiling, add the beaten eggs in them. Once some little bubbles start appearing on the sides and in the middle, then you can start beating the cream until thick. Put the cream in a bowl and cover with plastic wrap. Put it in a bigger bowl with water and ice cubes to cool it down.

Montate gli altri 500 gr di panna. Quando la crema sarà ben fredda, unitele.
Nel frattempo, tritate la polpa dell’ananasa. E infine aggiungete anche quella alla crema.

Whip the 500 gr of whipping cream. Add the cream.
Chop the ananas and add it to the cream as well. 

Per farcire la torta, tagliate il Pan di Spagna in tre strati. Lasciate l’ultimo così come, da quello centrale togliete 1 cm dal perimetro, e da quello finale 2 cm. Sbriciolate lo scarto. E procedete con il montaggio della torta: bagnate il primo strato (io ho usato acqua, il succo dell’ananas e un po’ di rum),  poi copritelo con la crema. Così anche per il secondo strato. Mettete il terzo strato, bagnatelo e ricoprite tutta la torta con la crema. Dopodiché cospargetela con le briciole di Pan di Spagna per darle l’effetto pallina di mimosa.

Start putting the cake together. First of all cut the sponge cake in three layers. Leave the one at the bottom as it is. Cut around 1 cm from the middle layer and two form the top layer. Crumble the waste. Then proceed putting the cake together: pour the syrup made out of water, rhum and ananas juice on the first layer, cover it with the cream, then go on with the second and third layers. Cover the entire cake with the cream and finally spread it with the Sponge Cake crumbles so that it will look like a mimosa flower at the end.
